Low Key Supper

On my own for supper tonight so left overs it is! Heated up the flank steak from last night and had a lettuce wrap. I broke a pepper jack cheese stick into pieces and melted that with the steak as it was warming up. Wrapped it up in a big piece of Bibb Lettuce and added some avocado, tomato and cilantro. So easy. So simple. So good. As a side, I drained and rinsed a can of black beans and combined that with a can of corn and some chopped up tomato. ( I also chopped green onion but spaced and forgot to add it…oops!) A complete, healthy dinner in under 5 minutes!

Now I’m off to pack for the weekend. Looking forward to welcoming in summer with great friends while remembering those that made it possible for us to do so! Dad, Uncle Jeff, Crow, Taylor, Flip, Flipper, Chip, Jessica and so many others, THANK YOU ALL!
